Turkey Pasta Salad
A creative twist to a classic salad
ingredients
- 1 pkg (350 g)
Olivieri Three Cheese Tortellini - 1 pkg (170 g)
Olivieri Olive Oil & Garlic Pesto - 3 cups (750 g)
smoked turkey breast, cubed - 1/2 cucumber, cubed
- 2 tomatoes, cubed
- 1 red pepper , thinly sliced
- 1 yellow pepper, thinly sliced
- 2 tsp (10 mL)
rice wine vinegar - 1 tsp (5 g)
fresh parsley, chopped for garnish
tip:
· Substitute with Olivieri Fresh Linguine or Fettuccini and cut into 3 inch strips.

Cook pasta according to package direction, drain, rinse under cold water In a large bowl combine the tortellini with the sauce, cucumber, turkey, peppers and rice wine, gently toss In a large bowl, combine all salad ingredients, except tomato. Refrigerate 1-2 hours to blend flavours. Gently toss in tomato just before serving.
