cooking instructions

1. Cook Olivieri Nutriwise Tortelloni Five Cheese according to package directions, drain and toss with one tablespoon of olive oil, set aside. 2. Lightly sprinkle eggplant and zucchini with salt and let drain for about 30 minutes. 3. Heat half the olive oil in fry pan, dry the eggplant and zucchini, sauté on medium heat until golden brown, set aside 4. Add remaining olive oil, add onions and sliced mushrooms and sauté on medium heat until golden brown combine with sauté egg plant and zucchini 5. Arrange half of the Olivieri Nutriwise Tortelloni Five Cheese in the bottom of a greased deep oven proof dish. Sprinkle with half the parsley 6. Arrange half of the vegetable mixture on top of parsley. Pour half of the sauce over the layer. 7. Repeat layering, then cover with remaining Olivieri Rosé Sauce, top with mozzarella slices 8. Bake covered for 20 minutes, uncover and continue to bake for 30 mins, let stand for five minutes before serving
