    • 2-3 Vine-ripened tomatoes, washed and cut into ½-inch (1 cm) slices
    • 2 tbsp (30 mL) Balsamic vinegar
    • 1 tbsp (15 mL) OLIVIERI® Basil Pesto
    • 3 tbsp (45 mL) Olive oil
    • 1 Package (1 piece) Fresh Mozzarella cheese, cut into ½-inch (1 cm) slices
    • Freshly ground pepper
    • Chopped fresh parsley or basil

  • Directions

    TOSS tomatoes with balsamic vinegar in a medium bowl. Set aside for 15 minutes. Meanwhile, combine pesto and olive oil in a small bowl and set aside. ARRANGE tomatoes and cheese slices on a platter. SPOON pesto mixture over the tomato and cheese. Top with freshly ground pepper and garnish with parsley or basil. TIPS: Substitute OLIVIERI® Basil Pesto with OLIVIERI® Olive Oil & Garlic Pesto Peel tomatoes before slicing by scoring an “x” on the bottom of the tomato and blanching in a pot of boiling water for 30 seconds. Remove tomato from water and immediately soak in a large bowl of cold water before peeling.
