Tortelloni with Matane Shrimp and Québec Asparagus

What you’ll need

  • 1 pack of Olivieri® Signature Formaggi with Aged Parmesan Reggiano Tortelloni
  • 1 bunch asparagus
  • 45 ml (3 tbsp) olive oil
  • 2 garlic cloves, minced
  • Thyme to taste
  • 45 ml (3 tbsp) white or red balsamic vinegar
  • 60 ml (4 tbsp) 35% cream or cooking cream
  • 500 ml (2 cups) Matane shrimp or Nordic shrimp
  • Pinch of Cayenne pepper or black pepper
  • 125 ml (1/2 cup) of Gré des champs cheese shavings or grated Parmesan cheese
  • Salt to taste

  • COOK the Tortelloni 3-4 minutes.
  • FRY the asparagus in olive oil.
  • ADD garlic, thyme and balsamic vinegar.
    COOK for a few minutes, add salt and pepper. Pour into a bowl.
  • FRY the shrimp in olive oil.
  • ADD the cream, pepper, asparagus, Tortelloni and mix.
Tasty Tip: when serving, sprinkle Gré des champs shavings or grated parmesan cheese on top.
