Asparagus and Red Pepper Linguine

A savoury veggie pasta recipe that makes the perfect side to any cut of meat. Yummy and healthy too!


What you’ll need

  • OLIVIERI® Linguine Nested 300 g
  • 12 stalks fresh asparagus, cut into 1-inch pieces
  • 1/2 cup red onion, thinly sliced
  • 1 red pepper, thinly sliced
  • 1/2 cup chicken broth
  • OLIVIERI® Basil & Cheese Pesto 160 g (3 tbsp)
  • 1/4 cup grated Parmesan cheese

  • SAUTÉ veggies in hot oil for 2-3 minutes, top with chicken broth and OLIVIERI® Basil & Cheese Pesto.
  • BOIL OLIVIERI® Linguine Nested until perfectly tender (2 minutes). Drain pronto.
  • TOSS pasta with veggie mixture.
  • GARNISH with Parmesan cheese and serve with love.
