Lemon Butter Tortelloni

This irresistible tortelloni dish is a light, lemony delight that is sure to impress.

What you’ll need

  • 1 pack of Olivieri® Artisan Gigante Tortelloni Pecorino Romano & Honey
  • 1 small shallot, minced
  • 2 cloves garlic, minced
  • 15mL (1tbsp) olive oil
  • 60 mL (¼ cuo) white wine
  • 45 mL (3tbsp) butter, cubed 
  • 5mL (1 tsp) lemon zest 
  • 30 mL (2 tbsp) lemon juice
  • 1 mL (¼ tsp) chopped fresh parsley 
Directions

  • COOK the OLIVIERI® Artisan GIGANTE TORTELLONI Pecorino Romano & Honey according to package directions. Drain and set aside. 
  • SAUTÉ shallot and garlic in olive oil on medium heat for 8 minutes.
  • ADD wine; simmer and let reduce until thick.  
  • WHISK butter in, one tablespoonful at a time, then the lemon zest and juice, salt and pepper.
  • ADD the OLIVIERI® Artisan GIGANTE TORTELLONI Pecorino Romano & Honey and toss until well coated.
  • SPRINKLE with parsley.

Tasty Tip: Add some baby spinach for a delicious boost of green.
