Lemon Chicken with Basil Fettuccine

Looking for new ways to serve chicken that will leave your family wowed? Add a zest of lemon and a side of basil fettuccine and presto!


What you’ll need

  • OLIVIERI® Basil Fettuccine Nested 300 g
  • OLIVIERI® Basil & Cheese Pesto 160 g
  • 4 x 113 g skinless boneless chicken breasts
  • 2 tbsp olive oil
  • Juice of one lemon
  • 5 g each oregano and chopped parsley
  • 250 g of shredded Parmesan cheese
  • Directions

    • PRE-HEAT oven to 350°F
    • BLEND olive oil and lemon juice, oregano, parsley, and shredded Parmesan cheese.
    • POUR mixture into a casserole dish and carefully place chicken on top. Bake for 20 - 25 min.
    • BOIL OLIVIERI® Basil Fettuccine Nested for 2 minutes. Drain pronto.
    • TOSS pasta with OLIVIERI® Basil & Cheese Pesto.
    • SERVE chicken and pasta side by side. Hold for applause.
    Tasty Tip: Combine 1 tbsp of olive oil with some diced tomatoes. Top chicken with new mixture.
