Loaded Bacon and Egg Breakfast Skillet Gnocchi

This one-pan breakfast fry up is a yummy way to start the day but it’s so good that you’ll make it for brunch, lunch and dinner too!

What you’ll need

  • 1 pkg (280 g) Olivieri® Skillet Cheese Gnocchi
  • 2 tbsp (30 mL) butter
  • 4 slices bacon, chopped
  • 8 breakfast sausages
  • 1 cup (250 mL) grape tomatoes, halved
  • 2 tbsp (30 mL) finely chopped fresh thyme
  • 4 eggs
  • Salt and pepper
  • 1 cup (250 mL) shredded Cheddar cheese (optional)
  • 2 tbsp (30 mL) finely chopped fresh chives (optional)
Directions



  • MELT butter in large nonstick skillet set over medium heat; cook bacon and sausages for 2 to 3 minutes or until fat begins to render and sausages are starting to brown.
  • ADD Olivieri® Skillet Cheese Gnocchi, tomatoes and thyme to skillet.
  • INCREASE heat to medium-high; sauté for 8 to 10 minutes or until gnocchi are starting to brown.
  • CREATE 4 pockets in skillet mixture using back of wooden spoon; crack egg into each pocket. Sprinkle with salt and pepper. Reduce heat to medium-low; cover and cook for 3 to 5 minutes or until egg whites are set but yolks are still runny or until cooked as desired.
Tips:
  • Sprinkle extra cheese and chives over top.
  • To make this dish vegetarian, substitute bacon and breakfast sausages for tempeh or fried tofu.
