Mediterranean Cheese Lovers Ravioli

The classic flavours of the Mediterranean come together in this elegant dish that is best enjoyed with good company.

What you’ll need

  • 1 pkg (500 g) Olivieri Cheese Lovers Ravioli
  • 2 tbsp (30 mL) olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1/2 cup (125 mL) Kalamata olives
  • 1/4 cup (60 mL) sun-dried tomatoes
  • 4 cups (1 L) spinach
  • 1/4 tsp (1 mL) each salt and pepper
  • 11/2 cups (375 mL) tomato sauce
  • 1/3 cup (75 mL) finely crumbled feta cheese
  • 2 tbsp (30 mL) finely chopped fresh parsley

 

Directions

  • 1. PREPARE ravioli according to package directions.
  • 2. HEAT oil in skillet set over medium heat; cook onion, garlic, olives and sun-dried tomatoes for about 5 minutes or until slightly softened. Stir in spinach, salt and pepper; cook for 2 to 3 minutes or until wilted. Stir in tomato sauce; bring to simmer.
  • 3. POUR sauce over ravioli in serving dish. Garnish with feta and parsley.

Tip: Substitute goat cheese for feta cheese if desired.
